well be thankful that it only plays one song at a time, imagine if it played all your songs at once 

I assume all zune players are the same on wp7 phones. On my Mozart I click my Music hub on the homescreen [Music and Videos] and I'm taking to my music albums straight away. I have to only click on an album art and the music player opens.
On there I have the Album Art, The timer bar, the 'Next 3 songs' on the album directly below the album art. The current song playing will be in a larger font and the next two will be in a smaller font. And directly below that are the music controls. [Previous > Play/Pause >
Next]

And If I want to see all the songs on that album simply click on those 'next 3 songs' directly below the album art.

You can also try this
Click on the Music Hub then click on Music and this takes you to a panoramic window. Swipe till you see SONGS and then you will get all the songs on your phone listed there in alphabetical order. Click one and it will start playing and continue to play all the songs in that list.

Or try putting your songs into some kind of playlist and try syncing that playlist to your phone.

 

here a quick run down of the zune player. Choose a song, artist, album whatever really to play once its playing press back to get back to your music, you can add  songs, artist, etc by going to that section find what your looking for and press and hold the item to get the options and select "add to now playing" rinse repeat as needed.

 You can save playlists on the phone from the "now playing" screen by pulling up the options from the 3 dots in the bottom left corner.
